WHOLE WHEAT BREAD 
2 c. warm water
2 tbsp. yeast (2 pkgs.)
1/2 c. honey
3 tbsp. oil
2 1/2 c. whole wheat flour
1/2 c. gluten flour
Scant tsp. salt

Mix water and yeast together, add honey, mix well. Let stand 5 minutes. Add to mixture, oil, whole wheat flour, gluten flour and salt. Mix together and mix with mixer until climbs beaters. Then by hand mix in 1 1/4 cups of whole wheat flour. Keep adding more flour until it looks right. Knead 10 minutes. Let raise until double, about 1 hour. Punch down, form into loaves. Let rise to tops of pans. Bake 350 degrees for 45 to 50 minutes. Rub with butter while still warm.
