LOW FAT OVEN FRIED CHICKEN 
2/3 c. plain bread crumbs
1/2 tsp. celery salt, onion powder, paprika and dried thyme
1 broiler/fryer chicken (approx. 3 lbs.) cut into quarters
3 tbsp. plain low fat yogurt

Preheat oven to 400 degrees. Place wire rack in large pan (so chicken will brown on both sides).

Mix bread crumbs and seasonings. Remove skin and excess fat from chicken (running under hot tap water will ease removal).

Coat chicken with yogurt. Coat both sides with crumb mixture. Place on rack. Bake 45-50 minutes. Should be light brown and juices clear when pierced with knife. Serves 4.
