PEPPER STEAK WITH RICE 
1 steak, cut 1" thick
2 tbsp. oil
2 tbsp. minced onion
1 clove garlic, minced
2 lb. green peppers, cut in strips
1/2 c. celery, sliced
2 tbsp. chopped pimento
1/2 c. consomme or beef broth
Salt & pepper
2 tbsp. cornstarch
2 tbsp. water
1 tsp. soy sauce
3 c. cooked rice

Cut steak in thin strips. Brown in oil. Add onion, garlic, green pepper, celery and pimento. Add broth and season. Cover and simmer 20 minutes. Mix cornstarch, water and soy sauce. Add and stir to thicken. Simmer 5 minutes. Serve on hot rice.
