APPLE HARVEST BLONDIES 
2/3 c. butter
2 c. packed brown sugar
3 eggs
2 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
2 medium/large apples, peeled and chopped
3 or 4 oz. cream cheese
1/2 c. chopped pecans
1 tsp. cinnamon
1/4 c. brown sugar

Place cream cheese in freezer 1 hour. Preheat oven to 350°F. Melt butter in saucepan. Remove from burner and stir in 2 cups brown sugar. Add eggs, flour, baking powder, salt and vanilla. Fold in chopped apple. Place in ungreased (or sprayed) 13 x 9 pan. Chop cream cheese in small pieces and mix with remaining ingredients. Sprinkle over batter and bake 35 minutes. Serve warm or at room temperature. Refrigerate leftovers.

(Can use Red Delicious apples that are no longer crisp.)
