1 1/4 c. flour (all purpose)
3/4 tsp. baking soda
1/4 tsp. salt
1/2 c. butter
3/4 c. crunchy peanut butter
1/2 c. sugar
1/2 c. brown sugar, packed
1 egg
1/2 tsp. vanilla

Stir together flour, baking soda and salt. In a mixer bowl beat butter for 30 seconds add peanut butter and sugars. Beat until fluffy. Add egg and vanilla, beat well. Add dry ingredients beat until well combined. Roll into 1 inch balls. Roll in sugar. Place 2 inches apart on cookie sheet. Flatten cookies with fork. Bake in oven at 375 degrees for 10 minutes.
