INSTANT SHRIMP GUMBO 
1/4 lb. bacon
1/4 c. chopped onion
1/4 c. diced celery
1/4 c. diced green pepper
2 c. fresh or canned tomatoes
4 c. chicken stock
2 c. shrimp
2 c. chopped okra
1 c. cooked rice

Dice and saute bacon; add onion, green pepper and celery. Saute until tender. Add tomatoes and stock. Cook vegetables until soft. Add shrimp, okra and rice. Cook for 10 minutes. Serves 6.
