SHRIMP AND OKRA GUMBO 
2 tbsp. bacon fat
3 c. chopped okra
2 onions
6 green onions
2 lbs. shrimp
1/2 can tomato sauce
2 red peppers
3 pods garlic
1 green pepper
1 bay leaf
8 c. water
1 tsp. salt

Smother okra, onions, and green pepper in bacon fat. Add tomato sauce when okra is almost cooked. Add water, pepper, green onions, bay leaf, garlic, and water. Heat to boiling and cook 10 minutes. Add peeled shrimp; cut into halves. Cover tightly and simmer 20 minutes. Serve with rice. Serves 8. Crabs may be substituted for shrimp.
