SHRIMP AND VEGETABLE GUMBO 
1/3 c. vegetable oil (preferably peanut oil)
2 lb. okra, sliced or 3 (10 oz.) pkg. frozen okra
2 tbsp. Cajun seasoning
2 lg. onions, chopped
2 lg. tomatoes, chopped
2 qt. chicken stock
1 lb. smoked sausage, cut into 1/2" slices
1 lb. fresh shrimp, shelled, deveined & cleaned
1/2 c. green onions, chopped
4 c. hot, cooked rice

In a heavy Dutch oven, heat vegetable oil. Add okra and cook over high heat until richly browned and tender, about 10 minutes. Add Cajun seasoning, onions and tomatoes; cook until onions are translucent. Add chicken stock and heat to a simmer. Add smoked sausage and shrimp; boil just until shrimp turns pink and are firm to touch, 3-5 minutes. Add green onions and serve immediately over cooked rice. Serves 8.
