BURRITOS 
You can make burritos out of almost anything. You can start fresh with the traditional meat, beans, vegetables, etc., or you can use leftovers.

LEFTOVER STEW:

Saute chopped onion, crushed garlic, in a skillet. Add stew. Chop the meat and vegetables into smaller pieces, if necessary, so it would be easier to stuff the tortilla. Add chili powder, a dash of cumin, hot red pepper, etc., to taste.

Thicken with instant mashed potatoes; stuff flour tortillas with the stew-potato mixture, and roll up as per instructions on tortilla package. Serve hot with your favorite salsa.

LEFTOVER CHILI BEANS:

Stuff tortillas with leftover chili beans. If beans need thickening, heat, then add a little corn meal or instant mashed potatoes.

LEFTOVER VEGETABLES:

Leftover potatoes, carrots, broccoli, garbanzos, stewed tomatoes, rice, celery, jicama, or anything your imagination brings forth! Mix with onions, garlic, seasonings to taste, and your favorite salsa. Cook vegetables, if they haven't already been cooked, then wrap in tortillas, following package instructions.

To heat before serving, put in lightly oiled skillet and turn to brown all sides. Serve with your favorite sauce, or salsa. Burritos freeze well. To serve: thaw, then brown in skillet, serve hot.
