PUMPKIN CAKE ROLL 
1 c. walnuts
1 c. granulated sugar
1 tsp. lemon juice
2 tsp. ground cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/4 c. butter, cut into pieces
1 c. powdered sugar
3 eggs
2/3 c. canned pumpkin
3/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
2 (3 oz.) pkgs. cream cheese
1/2 tsp. vanilla

Process nuts until chopped; take out. Add eggs and process 35-40 seconds or until lemon color. With machine running, add sugar; process until combined. Add pumpkin and lemon juice. Process with on/off turns just until mixed. Stir together flour, cinnamon, baking powder, ginger, salt, and nutmeg; add to work bowl. Process with 2 or 3 on/off turns just until flours disappears. DO NOT OVERMIX. Spread batter in greased and floured 15 x 10 x 1 inch baking pan. Sprinkle with chopped nuts. Bake.
