SWEET PICKLED PEACHES 
6 lb. peaches
6 c. sugar
2 c. water
2 c. vinegar
2 oz. mixed pickling spice, remove peppers

Select small, firm clingstone peaches. Peel and drop at once into a syrup made by boiling the sugar and water together and boil 15 minutes. Drain syrup from peaches. Add vinegar and spices to syrup and boil 15 minutes. Add peaches to spiced syrup and cook for 1/2 hour, cover and allow to stand overnight.

Next morning, drain off the syrup, boil for 20 minutes, then add the peaches and continue for 15 minutes longer. Cool and again let stand several hours or overnight.
