BROCCOLI CHOWDER 
1 lb. fresh broccoli
1 1/2 c. chicken broth
1 1/2 c. milk
1/2 c. chopped cooked ham (optional)
1/4 tsp. pepper
1 1/2 c. grated Swiss cheese
2 tbsp. butter
Salt to taste

Or use a combination of 3/4 cup Swiss cheese plus 3/4 cup Velveeta.

Wash broccoli; remove leaves and coarse stem ends. Pour broth into large pot; bring to boil. Add broccoli and reduce heat. Simmer, uncovered, 3 minutes. Cover; cook 10 minutes or until broccoli is just tender. Remove broccoli with slotted spoon and chop into bite-size pieces.

Add milk, ham and pepper to stock; bring to boil, stirring occasionally. Stir in cheese, butter and broccoli; heat until cheese is melted. Do not boil. Serve hot. Yield: 4 servings.
