MASHED POTATO CAKE 
1 3/4 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
3 eggs
1 c. buttermilk or sour milk
3/4 c. nuts
1 c. cold mashed potatoes
1/2 tsp. salt
3/4 c. shortening
1 tsp. baking soda
2 c. plus 2 tbsp. flour
1 c. raisins (optional)

Combine sugar, cinnamon, nutmeg, potatoes, salt, and shortening. Beat 4 minutes. Add eggs. Blend. Combine soda and milk and alternate with flour. Add nuts and raisins and bake in 350 degree oven for 50- 60 minutes in a greased and floured pan.

Frost with caramel frosting. Cook butter and brown sugar over low heat for 2 minutes. Add 3 tablespoons milk. Bring to boil. Cool. Add 2 cups powdered sugar.
