SPINACH QUICHE 
1 (10 oz.) pkg. frozen spinach, thaw and squeeze out water
2 tbsp. butter
Pepper
Pinch of nutmeg
2 tbsp. green or reg onion (or more), minced
3 eggs
1 1/2 c. heavy cream
1/2 lb. Swiss cheese, shredded
Frozen pie crust

Saute onion in butter briefly. Stir in spinach and seasonings. Saute briefly. Beat eggs and heavy cream together. Blend in spinach mixture. Pour into pie crust. Top with shredded cheese. Bake at 375 degrees for 40 minutes. Let set at least 5 to 10 minutes before serving.
