PICKLED BEETS 
1 gal. cooked beets
4 c. liquid from beets
4 c. vinegar
3 c. brown sugar
2 tsp. salt
2 1/2 tbsp. pickling spice

Cook liquid, sugar, salt and spices for 10-15 minutes. Fill 6 sterilized pint jars to top with beets and pour liquid over and seal.
