LOW CALORIE PICKLED BEETS 
2 cans (16 oz.) sliced beets
Artificial sweetener to equal 1 c. sugar
1 c. vinegar
1 tsp. minced onion
1/4 tsp. pickling spice

Drain juice from beets. Bring 2 cups of the juice to a boil. Add beets and other ingredients and bring to a boil. Chill overnight before serving.
