PICKLED BEETS 
2 c. drained julienne-cut canned beets
1/2 c. cider vinegar
1 tbsp. grated onion
1 clove garlic, mashed
Few drops of artificial sweetener
1 tbsp. pickling spice (tied in gauze)

Mix, gently together. Let sit in a covered container in the refrigerator for a few days. Remove garlic and spices before serving.
