Juice 8 pulp of 1 lime 2 drops vanilla estract Pinch of ground cinnamon 2 tangerines, seeded and sectioned (canned slices also do well) 4 bananas sliced into coins 1 tbsp. shredded unsweetened coconut may also add 4 lg. Kiwis to lg. bowl mixture In a small bowl, combine lime juice and pulp, vanilla and cinnamon. Best to use a small whisk or fork to reduce clumping. In a large bowl, combine tangerines, bananas and coconut (kiwis too). Pour lime mixture over them and toss until all fruit is coated. Serve at room temperature or slightly chilled. 4 servings. |
