CHOCOLATE RICOTTA CHEESECAKE 
Graham crumb crust
3 c. low fat cottage or ricotta cheese
1 c. sugar
4 eggs
1 c. whipping cream
1/8 tsp. salt
1/3 c. cocoa
1/4 c. flour
1/2 tsp. vanilla
Glazed fruit
Sweetened whipped cream (opt.)

Prepare crust; set aside.

Place cottage cheese, sugar and eggs in food processor or blender container; process until smooth. Add remaining ingredients except fruit and whipped cream. Process until smooth. Pour into prepared crust. Bake at 350 degrees for about 1 hour and 15 minutes or until set.

Turn off oven heat, open door and let stand in oven 1 hour, cool; chill thoroughly.

Top with fresh or glazed fruit, mint sprig and pipe with sweetened whipped cream. Makes about 10 servings.
