STUFFED SHELLS | |
24-30 jumbo macaroni shells 3 beef bouillon cubes 2 c. boiling water 1 lb. ground beef 2/3 c. chopped onions 2 (6 oz.) cans tomato paste 1 clove garlic, chopped 1 1/2 tsp. oregano 15 oz. ricotta cheese 2 c. mozzarella cheese 1/2 c. Parmesan cheese 1 egg Dissolve bouillon cubes in 2 cups boiling water. Brown ground beef, drain and add onion and garlic. Stir in tomato paste, oregano and bouillon; simmer for 30 minutes. Mix ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese and egg together. Cook and drain shells. Stuff shells with cheese and egg mixture and place in a greased baking dish. Pour sauce over shells and cover and bake at 350 degrees for 30 minutes. Uncover and sprinkle with remaining mozzarella cheese and bake until cheese melts. |
