PEANUT OR PECAN CAKE FILLING | |
1 can condensed milk 1 stick butter 3/4 c. sugar 1 c. whole milk 6 oz. evaporated milk 3 1/2 c. grated pecans 1 tsp. vanilla If using grated peanuts, use 3 cups parched. Combine first 5 ingredients and boil until thickened. Consistency may be compared to that of a custard as it turns. Add nuts and vanilla. Allow to cool completely before spreading on layers. Yield: Filling to spread on 4 round layers. Use your favorite icing to ice the sides. Note: Amount of nuts to add may need adjustment due to consistency of filling. |
