TEX MEX CORNBREAD CASSEROLE 
1 lb. ground beef
1 small onion, chopped
2-3 hot peppers, seeded & chopped (or small can of jalapenos)
1 pkg. (8 oz.) corn bread mix
1 c. creamed corn
1 c. milk
2 eggs
1/2 c. vegetable oil
3/4 tsp. salt
1/2 tsp. baking soda
3 c. cheddar cheese, shredded

Preheat oven to 350°F.

Cook meat, onion and peppers in skillet, drain and set aside.

Mix remaining ingredients together (except cheese). Put 1/2 batter into bottom of oiled and floured casserole dish. Sprinkle on 1/2 of the shredded cheese and all of the beef mixture. Layer remaining cheese on top and carefully spread rest of batter onto cheese.

Bake in preheated oven for 40 to 45 minutes.

Serves 8 to 12.
