VEGETABLE LASAGNE 
Grate the following:

10-20 oz. fresh spinach
3-5 carrots
Fresh or canned mushrooms (opt.)
1 onion
6 oz. Mozzarella cheese
6 oz. baby Swiss or Colby
16 oz. cottage cheese
3 eggs
Lasagne noodles
Salt & pepper
Parmesan cheese

Cook lasagne noodles according to directions on package. Grease cake pan or large casserole dish. Mix all the ingredients together except lasagne noodles and Parmesan cheese. Layer noodles and mixture or noodles, vegetables and then cheeses; repeat. Top with Parmesan. Bake at 375 degrees for 40 minutes or until lightly brown on top.
