ZUCCHINI CASSEROLE 
4 c. zucchini, thinly sliced
1 lg. onion, chopped
1 1/2 lb. ground beef
1/2 tsp. salt
1/8 tsp. pepper
6 oz. pkg. Stove Top dressing mix (chicken)
1 c. grated carrots
1 can cream of chicken soup
1 c. sour cream

Heat oven to 350 degrees. Grease 3 quart casserole. Cook zucchini 5 minutes in a little salt water; drain and set aside. Cook and brown beef, season with salt and pepper. Prepare stuffing mix according to directions, spread half of meat in bottom of casserole, top with half dressing. Mix rest of ingredients and keep layering until all are used up. Bake for 45 to 50 minutes at 350 degrees.
