CRACKLING CORNBREAD 
2 c. self-rising corn meal
1 c. cracklings
1 c. milk
1 egg
2 tbsp. oil

Mix dry ingredients. Beat egg, milk and oil together. Add to dry ingredients and mix well. Pour into a hot greased skillet. If using an iron skillet, bake at 450 degrees for 15-30 minutes; aluminum at 400 degrees for 20 minutes.

If using plain meal, add 1/4 teaspoon salt, 1/2 teaspoon baking soda and 1 cup sour milk or buttermilk.
