WHITE MOUNTAIN CAKE 
1 c. butter (overfill cup)
1 c. sugar
3 eggs, beaten separately
1 tsp. vanilla
1 tsp. mace
1 c. milk
3 c. pastry flour (reserve cup)
1 tsp. cream of tartar
1 tsp. baking soda

Mix all dry ingredients together. Cream butter and sugar. Add egg yolks. Beat until creamy. Add dry ingredients alternately with milk. Fold in beaten egg whites. Bake at 350 degrees for 40 to 50 minutes.
