MUSHROOM RICE 
1 garlic clove, minced
2 tbsp. butter
2 c. sliced mushrooms
1/4 c. chopped red or green pepper
1 1/2 c. chicken broth
2 tsp. onion flakes
1/2 tsp. salt
1 1/2 c. dry minute rice
2 tbsp. grated Parmesan cheese
1 tbsp. chopped parsley

Saute garlic in butter in medium skillet 1 minute. Add mushrooms and pepper; saute, stirring occasionally, 2 minutes. Add broth, onion flakes and salt; bring to boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes. Sprinkle with grated cheese and parsley. 4 servings.
