BUNCH ENCHILADAS 
12 oz. ground ham
1/2 c. sliced green onions
1/2 c. chopped pepper
2 1/2 c. shredded Cheddar cheese
8 (7 inch) flour tortillas
4 beaten eggs
2 c. light cream or milk
1 tbsp. flour
1/4 tsp. salt
1/4 tsp. garlic powder
Few drops hot pepper sauce

In bowl combine ham, onion and green pepper. Place 1/3 cup of the mixture and 3 tablespoons of cheese at one end of each tortilla; roll up. Arrange tortillas seam side down in a greased 12 x 7 1/2 inch baking dish.

Combine eggs, cream, flour, salt, garlic powder and hot pepper sauce; pour over tortillas. Cover and refrigerate several hours or overnight. Bake uncovered in 350 degree oven 45-50 minutes or until set. Sprinkle with remaining cheese. Bake 3 minutes to melt. Let stand 10 minutes.
