PRETTY LEMON CHICKEN 
2 lbs. deboned chicken
3 tbsp. soy sauce
1 tsp. salt

SAUCE:

2/3 c. sugar
1/2 c. white vinegar
2 tbsp. cornstarch
1 c. chicken broth
2 tbsp. lemon juice
1 carrot & 1/2 green pepper, slivered
3 stalks green onion, chopped

Combine soy sauce and salt and marinate chicken 30 minutes. Dredge in equal parts of flour and cornstarch and fry until done. Combine sauce ingredients except green onions and cook until thickened. Slice chicken and place on a bed of shredded lettuce and top with sauce. Garnish with lemon rings and green onions.
