CARROT CASSEROLE 
1 stick (1/4 lb.) butter, sliced
2 cans sliced carrots, drained
1 lb. Velveeta cheese, cubed
Ritz crackers

Layer butter, carrots and cheese in baking dish. Top with 45 smashed Ritz crackers. Bake at 350 degrees for 30 to 45 minutes.
