BABY CARROT CASSEROLE 
1 sm. pkg. frozen baby carrots
1 (8 oz.) pkg. Velveeta cheese
1/2 c. sugar or to taste
1/2 stick butter
1 roll Ritz crackers
2 tbsp. melted butter for topping

Boil carrots with sugar until tender. In casserole dish melt cheese and butter. Drain carrots, add to cheese mixture. Top with crushed Ritz crackers and melted butter. Bake at 350 degrees for 20 to 30 minutes or until light golden brown and bubbling.
