SWEET BABY CARROT CAKE 
4 eggs, beaten
2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1 tbsp. salt
1/2 c. oil
2 c. all-purpose flour
3 jars baby food carrots (small or large)
1/2 c. chopped walnuts (optional)
1/2 c. raisins (optional)

Grease 10x15-inch jelly roll pan.

Bake at 350°F for 15 to 20 minutes. Cool and frost.

Frosting:

1 (1 lb.) box powdered sugar
1/2 c. (1 stick) butter
2 (8 oz. ea.) pkgs. cream cheese, softened
1/2 tsp. vanilla

Variation: Sprinkle chopped walnuts on top of frosting rather than mix in batter.
