SWEET POTATO CASHEW BAKE 
1/2 c. brown sugar
1/3 c. broken cashews
1/2 tsp. salt
1/4 tsp. ginger
2 lbs. sweet potatoes, cooked, peeled, & cut into thick pieces
1 (8 oz.) can peach slices, well drained
3 tbsp. butter

Combine brown sugar, cashews, salt and ginger. In 10 x 6 x 2 inch baking dish layer 1/2 the sweet potatoes, 1/2 the peach slices and 1/2 the brown sugar mixture. Repeat layers. Dot with butter.

Bake, covered in 350 degree oven for 30 minutes. Uncover and bake mixture about 10 minutes more. Spoon brown sugar syrup over potatoes and peaches before serving. Makes 6 to 8 servings.
