SWEET POTATO PEAR BAKE | |
1 large can Pear halves 3 c. cold Mashed Sweet Potatoes 4 tbsp. Butter, melted, divided 3 tbsp. Brown Sugar 1/4 tsp. Salt 1/4 tsp. Nutmeg 2 tbsp. Honey 1 tbsp. Grated Orange Peel 6-8 tbsp. Whole berry Cranberry Sauce 1. Drain pears, reserve 2 Tbsp. of juice (discard remaining juice or save for another use). 2. In a mixing bowl, combine the sweet potatoes, 3 Tbsp. butter, brown sugar, salt, nutmeg, and pear juice. Beat until combined. 3. Spoon into a greased shallow baking dish. Arrange pears on top, cut side up. 4. In a small saucepan, combine the honey, orange peel and remaining butter. Cook until heated through. Drizzle half over the pears. 5. Bake, uncovered at 350 for 30 minutes. Drizzle with remaining honey mixture. Bake 15 minutes longer. Fill pear halves with cranberry sauce. |
