MEXICAN TREAT 
1 lb. ground beef
1 c. chopped onions
1 (15 oz.) can Ranch style beans (sometimes use whole kernel corn instead)
1 c. salsa roja (mild Mexican red table sauce)
3 c. grated Cheddar cheese
1 c. sour cream
1 (6 oz.) pkg. cornbread mix
2/3 c. milk
1 egg, beaten

In large skillet, cook beef and onion until meat is cooked and onions clear and tender. Stir in beans (or corn) and salsa roja. Pour this mixture into a 10 x 10 x 2 inch baking pan. Spread evenly to make bottom layer. Use all cheese for next layer. Spread sour cream on cheese. Mix in bowl cornbread, milk, and egg. Pour the cornbread mixture over top of casserole, sealing sides. Then bake in preheated oven at 350 degrees for 50 minutes or until done.
