BANANA NUT CAKE 
2 1/4 c. Softasilk flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
2/3 c. shortening
2/3 c. buttermilk
3 eggs
1 1/4 c. ripe mashed bananas
2/3 c. chopped nuts

Heat oven to 350 degrees. Grease and flour 9 x 13 inch or two 9 inch or three 8 inch or 32 cupcakes. Measure all ingredients into a large mixer bowl. Blend on low speed, scraping bowl occasionally. Pour into pans. Bake 35-45 minutes. Frost when cool.
