EASY RICE PUDDING 
4 c. milk
1/4 c. (1/2 stick) butter
1/4 c. sugar
1/2 tsp. salt
1/2 c. uncooked rice
1 (9 oz.) tub Cool Whip
1/2 tsp. almond extract

Put milk, butter, sugar and salt in large pot; simmer very slowly. When it first starts to boil, slowly add rice, stirring occasionally. Simmer 1 to 1 1/2 hours. Keep stirring every 10 minutes until well thickened. When cool, add one small container Cool Whip and 1/2 teaspoon almond extract.
