PUMPKIN ROLL 
1 c. sugar
1 c. flour
2/3 c. pumpkin
1 tsp. each salt, cinnamon & baking soda
3 eggs
Powdered sugar

Mix well all ingredients. Butter cookie sheet (jelly roll type). Lay wax paper completely over buttered cookie sheet and butter top of wax paper. Pour batter on top of wax paper. Bake 15 minutes at 350 degrees. Sprinkle tea towel with powdered sugar. Immediately after baking cake, turn cake onto tea towel. Roll cake, towel and all. Cool rolled.

FILLING:

1 c. powdered sugar
2 tbsp. butter
8 oz. cream cheese
1 tsp. vanilla

Mix well above ingredients. Unroll cake and spread on filling, leaving about 1" clean edge. Roll back up and keep refrigerated.
