SWEET POTATO PIE 
2 c. cooked, mashed yams (better than sweet potatoes)
1 1/2 c. sugar
2 eggs
1/4 c. butter
1 tsp. cinnamon
1 (9 inch) unbaked pie shell

Mix yams, sugar, eggs, butter and cinnamon with mixer until smooth. Pour into pie shell. Bake in preheated oven 425 degrees for 45 minutes to 1 hour or until filling is firm in center. Do not overcook.
