LINGUINE WITH TOMATOES AND BASIL 
4 lg. tomatoes, cut in 1/2 inch cubes
1 lb. Brie cheese, rind removed, cut or torn into irregular pieces
1 c. cleaned fresh basil leaves, cut into strips
3 garlic cloves, peeled and finely minced
3/4 c. plus 1 tbsp. olive oil
2 1/2 tsp. salt
1/2 tsp. fresh pepper
1 1/2 lb. linguine
Fresh grated Parmesan

Combine tomatoes, Brie, basil, garlic, 1 cup olive oil, 1/2 teaspoon salt and pepper in large bowl. Prepare at least 2 hours before serving and set aside covered at room temperature. Cook linguine, boil until tender, but firm, 8-10 minutes.

Drain and toss with tomato sauce. Serve at once, passing fresh Parmesan with it.
