CRAB EXQUISITE 
1 lb. crab meat
1 tbsp. butter
2 scallions (white part only) chopped
1/3 c. white wine
1/2 tsp. salt
1 dash pepper
1/4 tsp. tarragon
1 tbsp. cornstarch
1/2 c. heavy cream
1 tsp. tomato sauce
1/2 tsp. lemon juice
Grated Swiss cheese or bread crumbs
1 tbsp. butter

Saute minced scallion in 1 tablespoon butter until soft. Add crab and saute briefly. Sprinkle with salt, pepper and tarragon. Add wine and boil down to half.

Mix cornstarch with cream. Take crab mixture off heat and add heavy cream sauce. Bring to boil for 2 minutes. Add tomato sauce for pink color and dash of lemon juice. Put in 4 buttered shells. Sprinkle with grated Swiss cheese or bread crumbs. Top with touch of butter and brown in 400 degree oven for 15 minutes.
