CHEESE BROCCOLI SOUP 
3 c. chopped potatoes
1/2 c. chopped carrots
1 chicken bouillon
1/2 c. chopped celery
1 tbsp. parsley flakes
1/4 c. chopped onion
1 c. water
Dash of pepper
1 1/2 c. broccoli
1/4 to 1/2 lb. ham cubes
8 oz. Velveeta cheese
2 tbsp. flour in 1/2 c. milk

Combine potatoes, carrots, bouillon, celery, parsley, onion, water, pepper and broccoli. Simmer 20-30 minutes or until vegetables are tender. Stir in flour and milk mixture and cook until thick. Add Velveeta and ham and cook just until cheese melts.

Very good. but I was confused by the small amount of water. A cup did not seem right to me. I was making a double recipe, so I chopped up all the the veg and put in stock pot then added water mixed with the bouillon then added additional water utill it only just covered all the veg in the pot. Then I used 1.5x the Velveeta (so a total of 24 oz. of Velveeta). This was a grand slam for my family. It fed four with plenty of leftovers. ***
