CREAM OF BROCCOLI SOUP 
1 1/2 lbs. fresh broccoli, cut into pieces (stalks)
1 onion, chopped
1 carrot, sliced thin
2 stalks celery with leaves, chopped
2 medium potatoes
1 tsp. salt
4 c. chicken broth
1 c. light cream

Combine all ingredients in saucepan, except cream. Cook, covered, until vegetables are done. Liquify in blender. Return to pan and add broccoli flowerettes. Simmer until broccoli pieces are tender, about 5 minutes. Add cream; simmer about 1 to 2 minutes.

Note: Asparagus, cauliflower, peas, or any other vegetable can be substituted.
