SPINACH QUICHE | |
1 stick butter 1 (3 oz.) pkg. cream cheese 1 c. flour Soften butter and cream cheese. Stir in flour. Chill for 2 to 3 hours. Either pat into muffin tins or roll out circles to fit tins. Makes 24 miniature, 12 regular or 9 inch crust. Can also use crust for turnovers. FILLING: 4 eggs 1 lg. can Pet milk 1 c. grated cheese, American or Cheddar 1/2 c. cooked chopped spinach, drained 1/2 tsp. seasoned salt 1/2 tsp. pepper Mix all ingredients and place about 1 1/2 tablespoons in each miniature or more if regular muffin tin which has been lined with crust. Bake about 20 minutes or until slightly golden and set. You may make mushroom or sausage quiche by substituting chopped mushrooms or cooked drained sausage for spinach. These may be frozen after they are baked. Take out of freezer and heat in hot 400 degree oven until hot. |
