ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
1 tsp. vanilla
2 c. peeled and grated zucchini
3 c. flour (2 c. wheat, 1 c. white flour)
1 tsp. salt
1 tbsp. cinnamon
1 tsp. baking soda
Dash of nutmeg
1/2 c. nuts, raisins or apples (optional)

Beat eggs until foamy. Beat in oil, sugar and vanilla. Beat in zucchini. Add all the dry ingredients. Add optional nuts or apples. Grease 2 bread pans. Bake at 325 degrees for 60-75 minutes.
