ORANGE ZUCCHINI BREAD | |
1 c. flour (whole wheat) 1 tsp. baking powder 1 tsp. ground cinnamon 1/4 c. honey 2 eggs 1 1/2 tsp. grated orange peel 1 c. grated zucchini 1/2 tsp. salt (I leave out) 1/2 tsp. ground nutmeg 1/2 c. vegetable oil 1/2 c. no sugar All Bran cereal (or raw bran) 1 tsp. vanilla 1/2 c. chopped nuts Combine flour, baking powder, salt, cinnamon and nutmeg. Set aside. In large mixing bowl beat honey, oil and eggs until well combined. Stir in cereal, peel and vanilla. Add flour mixture, zucchini and nuts. Mix well. Spread evenly in 10 x 6 x 2 (1 1/2 quart) baking dish. Bake at 325 degrees for 35 minutes or until wooden pick inserted near center comes out clean. Cool completely. Spread with cream cheese frosting if desired. Yield 1 loaf. |
