BEEF ROULADEN 
2 1/2 lb. round steak
1/2 lb. bacon, chopped
1/2 lb. ground beef
2/3 c. onion, chopped and sauteed
2 eggs, beaten
1 c. bread crumbs
1 tbsp. chopped parsley

SAUCE:

1 c. dry red wine
1 c. tomato paste
2 cloves garlic

Cut beef into 4 inch pieces. Combine rest of ingredients in bowl to make filling. Put 1 ounce of filling and strip of pickle on each piece of meat. Roll up and secure with toothpicks. Dredge rolls with flour and brown on all sides in frying pan. Place browned rolls in baking pan, combine the sauce and pour over. Cover tightly and bake at 350 degrees for 1 to 1 1/2 hours or until meat is tender. Serve with red cabbage.
