APPLE/LEMON PIE 
1 c. sugar
1/2 tsp. salt
1/2 tsp. grated lemon
4 eggs, beaten
3 tbsp. lemon juice
1/4 c. butter, melted
1 c. applesauce, unsweetened

Combine sugar, salt, lemon rind, and set aside. Then mix eggs, lemon juice, butter and applesauce; add these to dry ingredients. Pour into unbaked 9 inch pie shell. Bake 15 minutes at 450 degrees, then 15 minutes at 350 degrees until set. Cool.
