GALVESTON BAKED RICE 
2/3 c. long grain rice
5 slices bacon, fried, crumbled and drippings reserved
2 c. peeled, chopped tomatoes (about 4)
1 (10 oz.) pkg. frozen cut okra, thawed
1/2 c. chopped onion
1/4 c. chopped green pepper
2 tbsp. chopped green chilies
1/2 c. water
2 tsp. sugar
1/2 tsp. salt
Dash of pepper

Preheat oven to 350 degrees. Butter a shallow 2 quart baking dish. Spread rice evenly in dish. Spoon reserved bacon drippings over rice. Top with even layers of tomatoes, okra, onion, green pepper and green chilies.

In a small bowl mix water, sugar, salt and pepper; pour over vegetable mixture. Cover with foil. Bake for 30 minutes. Remove foil, sprinkle with bacon and bake 15 minutes longer or until rice is tender and liquid is absorbed. Makes 6 (1 cup) servings.
