TACO BAKE | |
1 1/2 lbs. ground beef 1 (10 oz.) can corn, drained 1 green pepper, chopped 1 (8 oz.) can tomato sauce 1 pkg. taco seasoning 1/2 c. water 1 pkg. Jiffy corn muffin mix 1 (2.8 oz.) can Durkee French fried onions 2 oz. Cheddar cheese (more is better) Preheat oven to 400 degrees. Cook ground beef and drain. Stir in tomato sauce, water and taco mix. Add corn and green pepper. Pour mixture into a 2-quart baking dish. Prepare corn muffin mix according to the package directions. Stir in 1/2 can of the Durkee onions. Spoon mixture on top of meat mixture leaving a space in the center to allow steam to escape. Bake for 20 minutes or until corn bread is done. Mix the remainder of the onion rings with the cheese. Sprinkle on top of cornbread. Return to oven for a few minutes until golden brown. |
